Nitrate is found in leafy green veg and beetroot, and regulates vascular and metabolic function. Pre-exercise supplementation with sodium nitrate or beetroot juice is likely to boost your performance during strength, power, and speed-based events. Nitrate/beetroot is likely to improve endurance exercise capacity (time-to-exhaustion) but not time trial performance, and is typically only evident in recreational level athletes — the endurance-enhancing effect is blunted in highly-trained endurance athletes.
